PUMPKIN AND HERB SOUP
SERVES - A LOT!
Serve with Turkish bread or wholemeal croutons
INGREDIENTS
1 tablespoon olive oil
2 garlic cloves, chopped finely
1 brown onion, coarsely chopped
1/2 of a large pumpkin, peeled, seeded and cut
1L chicken or vegetable stock
3 medium to large potatoes
2 sweet potatoes
1 teaspoon mild curry powder (optional)
1-2 cups of herbs (finely chopped) - Basil, rosemary, parsley, oregano
METHOD
Heat oil in large pot with garlic and onion
Stir for 5 minutes or until golden
Add chopped pumpkin / potatoes / sweet potato
Add in herbs and spices
Add in Stock
Bring to boil and simmer for 30 - 40 minutes until all vegetables are soft
Use a stick blender to blend until smooth
