PUMPKIN AND HERB SOUP

SERVES - A LOT!

Serve with Turkish bread or wholemeal croutons

INGREDIENTS

  • 1 tablespoon olive oil

  •  2 garlic cloves, chopped finely

  • 1 brown onion, coarsely chopped

  •  1/2 of a large pumpkin, peeled, seeded and cut

  • 1L chicken or vegetable stock

  • 3 medium to large potatoes

  • 2 sweet potatoes

  • 1 teaspoon mild curry powder (optional)

  •  1-2 cups of herbs (finely chopped) - Basil, rosemary, parsley, oregano

METHOD

  1. Heat oil in large pot with garlic and onion

  2. Stir for 5 minutes or until golden

  3. Add chopped pumpkin / potatoes / sweet potato

  4. Add in herbs and spices

  5. Add in Stock

  6. Bring to boil and simmer for 30 - 40 minutes until all vegetables are soft

  7. Use a stick blender to blend until smooth
