BEEF AND VEGE SAUSAGE ROLLS

Makes 20-30 SAUSAGE rolls

Serve with homemade tomato sauce!

INGREDIENTS

  • 1 cup wholemeal breadcrumbs

  • 500 grams organic beef mince

  • 1 egg, plus 1 extra, lightly beaten egg

  • 1 zucchini, finely grated

  • 1 carrot finely grated

  • 1 onion, grated

  • 1/2 cup chopped coriander leaves

  • 1/2 cup chopped parsley leaves

  • 4 sheets frozen puff pastry, just thawed

  • Sesame seeds

METHOD

  1. Preheat the oven to 180’C and line 2 baking trays with backing paper

  2. Process crumbs, chicken and unbeaten egg in a food processor untill well combined. place in a bowl, mix well with all vegetables and herbs

  3. Place pastry sheets on a floured surface and halve them

  4. Spoon mixture length ways along center of each piece

  5. Fold 1 side of pastry over and tuck in beside filling, then fold over other side to make a roll, pressing down lightly to seal. Do this for all pieces of pastry.

  6. Cut rolls into 5 cm pieces, also stab two small wholes in each roll to prevent splitting

  7. Place all rolls on baking sheets

  8. Brush with extra beaten egg and sprinkle with sesame seeds

  9. Bake for approx. 30 minutes until the rolls are lightly browned and mixture is cooked through
