ZUCCHINI AND TOMATO SOUP

SERVES a fmaily

Serve with Turkish bread or wholemeal croutons

INGREDIENTS

  • 1 tablespoon olive oil

  •  2 garlic cloves, chopped finely

  • 1 brown onion, coarsely chopped

  • 4-5 zucchinis, finely chopped

  • 2 tins of tomatoes (or fresh tomatoes)

  • 1 small tub of tomato paste

  •  2 - 3 cup water

  • 1 cup basil, chopped

  • 1 handful thyme and oregano, chopped

  • 2 teaspoons sugar

  • 1 vegetable stock cube

  • Sprinkle of salt and pepper

METHOD

  1. Heat oil in large pot with garlic and onion, stir for 5 minutes or until golden

  2. Add in zucchinis, stir through until cooked

  3. Add all tomatoes, tomato paste, herbs, salt and pepper, stock cube and cups of water

  4. Simmer for 20 - 30 minutes

  5. Blend with stick blender to a smooth consistency
