ZUCCHINI AND TOMATO SOUP
SERVES a fmaily
Serve with Turkish bread or wholemeal croutons
INGREDIENTS
1 tablespoon olive oil
2 garlic cloves, chopped finely
1 brown onion, coarsely chopped
4-5 zucchinis, finely chopped
2 tins of tomatoes (or fresh tomatoes)
1 small tub of tomato paste
2 - 3 cup water
1 cup basil, chopped
1 handful thyme and oregano, chopped
2 teaspoons sugar
1 vegetable stock cube
Sprinkle of salt and pepper
METHOD
Heat oil in large pot with garlic and onion, stir for 5 minutes or until golden
Add in zucchinis, stir through until cooked
Add all tomatoes, tomato paste, herbs, salt and pepper, stock cube and cups of water
Simmer for 20 - 30 minutes
Blend with stick blender to a smooth consistency
